Recipe makes 4 Servings

2 large jalapeños, stemmed and seeded
6 garlic cloves, smashed
1 cup(s) green onions, chopped
2 Tbsp fresh mint, chopped
1 cup(s) fresh cilantro, leaves loosely packed
1 cup(s) fresh parsley, leaves loosely packed
1/4 cup(s) fresh lemon juice
2 Tsp ground cumin
2 Tsp coriander
1/4 cup(s) extra virgin olive oil
1 rack of H-E-B Natural Pork Baby Back Ribs

In a food processor, combine jalapeños, garlic, green onions, mint, cilantro, parsley, lemon juice, ground cumin, coriander and olive oil. Pulse until smooth then season to taste with salt and pepper.
Rub mixture liberally all over ribs, place on a sheet pan lined with parchment paper, cover with plastic wrap, and refrigerate overnight or at least 8 hours.
Preheat oven to 250ºF.
Cook ribs 3 1/2 to 4 1/2 hours or until pull apart tender. Allow to cool at least 10 to 15 minutes before cutting and serving.
