1 Lb H-E-B Fully Cooked Pork Carnitas
2 cup(s) Cookwell & Company Green Chile Stew
2 Tbsp extra virgin olive oil, divided use
1/2 cup(s) white onion, sliced
1 cup(s) tomato
1/4 cup(s) H-E-B Red Wine Vinegar
1/4 cup(s) H-E-B Whole Piquillo Peppers, sliced
2 Tsp sugar
4 Seeded Rye Bread Scratch Made
2 H-E-B Sliced Mozzarella Cheese

Heat pork and green chile stew in a pan until hot and combined.
In a sauté pan, add 1 tablespoon of oil and cook onions, tomatoes, vinegar, peppers, and sugar for 10 minutes until vegetables are soft and flavors are fully combined. Set pan aside.
Add remaining oil to pan and toast bread over medium heat, about 2 minutes. On two slices of bread, spoon pork and stew mixture and cover with a slice of cheese. Add tomato mixture.
Place second slice of bread on cheese to make sandwich. Press down with spatula to flatten.
Take sandwiches out and slice them in half. Enjoy!
