1 Tbsp grapeseed oil
1 1/2 Lb ground beef
1 cup(s) red onion, finely diced
15 Oz H-E-B Charro Beans, canned borracho beans work well too
4 Oz diced green chilies
1/3 cup(s) H-E-B That Green Sauce, mild or medium, your choice
1/3 cup(s) fresh cilantro, finely chopped
11 Oz cornbread mix
1 cup(s) milk, to make cornbread
1 large egg, to make cornbread
1/3 cup(s) oil, to make cornbread

Instructions

Preheat oven to 400ºF. Heat an oven safe skillet over medium-high, cast iron works great for this.

Add grapeseed oil and ground beef to skillet. Cook and stir for 5 to 6 minutes until beef is cooked through and starting to brown.

Add onions, stir for 4 to 5 minutes until onions begin to soften.

Add beans, green chilies, sauce and cilantro. Stir well and remove from heat.

Mix together cornbread according to package directions using milk, egg and oil.

Spread batter out in a single layer over beef mixture. Cook for 15 to 20 minutes, or until nicely browned.
