Greek Yogurt Marinated Chicken

Recipe makes 6 Servings

1 1/2 Lb boneless, skinless chicken thighs
1 medium lemon, zested
2 garlic cloves, minced
1/2 cup(s) H-E-B Plain Greek Yogurt
2 Tbsp organic Dijon mustard

In a glass bowl or plastic container, combine all ingredients and toss chicken until thoroughly coated. Cover and refrigerate overnight or at least 8 hours.
Preheat grill to medium-high or around 375ºF.
Meanwhile, remove chicken from fridge and allow to come to room temperature.
Shake off excess marinade from chicken and discard leftover marinade.
Spray grill with non-stick spray or wipe with a towel moistened with vegetable oil.
Grill chicken 5 to 6 minutes per side, or until internal temperature reads 170ºF.
Season to taste with salt and pepper or your favorite seasoning.
