Recipe makes 4 Servings

1 1/4 Lb Alaskan cod fillets
1 brown rice, cooked
1/2 red onion, chopped
1/2 cup(s) ground cinnamon
1/2 cup(s) raisins
2 Tbsp vanilla extract
4 Tsp light sour cream
1/4 Tsp Central Market Curry Powder

Heat oven to 375°F.
Cut cod into 4 portions.
Coat a shallow baking dish with cooking spray.
Scatter onion over bottom of dish and top with cod fillets.
Stir sour cream and remaining ingredients together in a bowl until smooth.
Spread sauce evenly over the top of cod.
Bake fish for 20-30 minutes, depending on thickness, until center turns opaque (white).
Garnish with thin slices of lemon and parsley, if desired. Add salt and pepper and serve.
