Gooey Ham and Cheese Stuffed Baked Potatoes

Recipe makes 4 Servings

4 medium russet potatoes, well scrubbed
6 Tbsp salted butter
4 Oz cream cheese
6 Oz Gouda cheese, shredded
1/2 Tsp sea salt
1/2 Tsp black pepper, freshly cracked
1/2 Lb H-E-B Post Oak Smoked Ham, 1/2 inch thick slice, cubes

Microwave potatoes until tender, about 5 to 7 minutes each, depending on size.
Preheat oven to 400ºF. While potatoes are cooking, melt butter, cream cheese, half of Gouda cheese, salt and pepper in a sauce pan.
Scoop out middle of potatoes and add potato and ham to melted butter mixture. Stir together and scoop back into potato skins.
Top with remaining cheese and heat in oven, just until cheese is melted and starting to brown on top, or about 6 to 7 minutes.
