Goat Cheese Tart with Pretzel Crust

1 1/2 cup(s) H-E-B Pretzel Crackers- Sea Salt
2 Oz unsalted butter, melted
1/3 cup(s) light brown sugar
16 Oz cream cheese, softened
8 Oz goat cheese
1 vanilla bean, split in half, seeds scraped
1 egg yolk
2 large eggs
1/2 cup(s) maple syrup
1 Tsp lemon, zested

Instructions

Preheat oven to 350°F. Place a 9" x 13" Pyrex pan full of water on bottom rack of oven. (This will be the water bath for providing steam so your cheesecake cooks gently.)

In a food processor combine entire bag of pretzels, melted butter and sugar together. Pulse until smooth like sand.

Spray inside of a spring form pan or tart pan with non-stick spray. Line bottom of pan with parchment.

Empty contents of the food processor (the crust) into pan and press on bottom and up the side to create a crust.

Place crust in oven for 10-15 minutes, just so crust can set, then remove and allow it to cool.

To make filling combine cream cheese, goat cheese, egg yolk, whole eggs, maple syrup, and lemon zest into a bowl or stand mixer. Whip until completely smooth. Pour contents of bowl into spring form pan over the cooled crust. Spread evenly with the back of a spoon.

Place in oven and bake for 40 minutes or until cake has set to 2 inches from center. Turn off oven and allow cake to remain in oven for 15-20 minutes to cool slowly. Remove and serve, or refrigerate for later use.
