1 Tbsp olive oil
1/2 small white onion, thinly sliced
1 Oz mushrooms, sliced
4 cup(s) bunched spinach
4 Oz H-E-B Goat Cheese, crumbled
4 H-E-B® Wheat Tortillas
2 medium tomato, diced

Instructions

Heat oil in a large non-stick skillet, then cook onions on medium heat until golden brown; remove from pan, and set aside; add mushrooms to same skillet, and cook 3-4 minutes; then, add spinach and cook until wilted.

Spread goat cheese on each tortilla, then top with mushroom and spinach mixture, tomato and onions.

Fold tortilla to close, then place over medium-high heat and toast 2 minutes per side.
