Gnocchi & Squash with Charred Tomato Basil Sauce

Recipe makes 6 Servings

2 Tbsp extra virgin olive oil
1 Tbsp fresh garlic, minced
1 large zucchini, sliced into rounds, not too thin
1 large yellow squash, cut into rounds, not too thin
1 Lb gnocchi
1 Four J Charred Tomato & Basil Sauce
1 cup(s) Pecorino Romano Cheese, shredded

In a non-stick sauté pan over medium heat add olive oil to get hot, about 1 to 2 minutes.
Stir fry garlic, zucchini and squash slices for about 3 to 5 minutes, just to get some color on zucchini. Add a pinch of salt and pepper.
Bring a pot of water to a boil and cook gnocchi. Gnocchi are cooked when they begin to float.
Add gnocchi to zucchini along with a jar of charred tomato basil sauce, allowing sauce to come to a simmer.
Place gnocchi into a serving dish and top with cheese. Season to taste as needed with salt and pepper.
