Ingredients

Recipe makes 8 Servings

1 cup(s) granulated sugar
6 large eggs, Yolks and whites separated
16 Oz mascarpone cheese
1/2 cup(s) heavy whipping cream
2 packages of Alessi Biscotti Savoiardi Lady Fingers, use as needed
1 cup(s) brewed espresso or strong coffee, plus more as needed for dipping lady fingers
2 Tbsp cocoa powder, as needed for dusting

Instructions

In a metal or glass bowl whisk sugar and egg yolks together until pale yellow and creamy.

In a separate bowl whisk mascarpone cheese and heavy cream together until fluffy and thick.

Add mascarpone mixture gently into yolk and sugar and fold to combine with a spatula. Refrigerate for 10 minutes.

Meanwhile in a stand mixer beat whites on high speed with a small pinch of salt until stiff peaks form.

Add egg whites into cream mixture and fold gently to combine.

To assemble dessert, lay out any square serving dish and dip lady fingers one at a time into coffee.

Line cookies tightly together over bottom of dish. May have to break a few in half to get them to line dish properly.

Spread a layer of cream over first layer of lady fingers evenly.

Repeat layering of dipped lady fingers and cream until dish is full to top. It should only be 2 to 3 layers max.

Cream should be the final layer, dust evenly with cocoa powder and refrigerate for at least 4 hours.
