Ginger Peach Pork Skewers

Recipe makes 4 Servings

12 skewers
1 Lb pork tenderloin
1/4 Tsp kosher salt
2 ripe peaches, peeled seeded and cubed (use frozen if fresh are unavailable)
1 Tbsp grated ginger
3 garlic
1 jalapeño pepper
1 Tbsp lime, juiced
1/2 cup(s) cilantro

Soak the skewers for a minimum of 30 minutes.
Slice pork into thin slices and thread onto the skewers, then season with salt.
Combine peaches, ginger, jalapeño and lime juice into blender or food processor.
Blend until smooth.
Place pork in a large baking dish or zip top bag. Cover with marinade and coat evenly. Allow pork to marinate for up to 3 hours.
Pre heat grill to medium high heat. Remove pork from marinade, gently shake off any extra.
Grill pork for approximately 7 minutes per side. Or until the internal temperature reaches 155ºF.
Garnish with cilantro and lime wedges.
