Ginger Peach Chicken Skewers

Recipe makes 6 Servings

1 Lb chicken breast, cut into thin slices and threaded onto skewers
1/2 Tsp fine sea salt
2 peaches, peeled, seeded and cubed (can use frozen if fresh are unavailable)
1 Tbsp ginger, grated
2 garlic clove
1 jalapeño pepper
1 Tbsp lime, juiced
1/2 cilantro
12 wooden skewers, soaked in water for 30 minutes

Soak skewers for a minimum of 30 minutes.
Slice chicken into thin slices and thread onto the skewers, then season with salt.
Combine peaches, ginger, garlic cloves, jalapeño and lime juice into blender or food processor. Blend until smooth.
Place chicken in a large baking dish or zip top bag. Cover with marinade and coat evenly. Allow chicken to marinate for up to 3 hours.
Preheat grill to medium high heat. Remove chicken from marinade, gently shake off any extra.
Grill chicken for approximately 7 minutes per side, or until the internal temperature reaches 165°F.
Garnish with cilantro and lime wedges.
