Ghee Seared Scallops with Carrot Schug

6 large Diver Scallops U-10 or U-15, set at room temperature at least 20 minutes

Place a medium size non-stick skillet over medium-high heat and allow to get hot.
Season scallops liberally with salt and pepper on both sides. Add ghee to pan and allow to get hot, approximately 20 to 30 seconds.
Add scallops, and allow to sear 3 to 4 minutes on first side or until a nice brown crust is achieved before flipping scallops and cooking an additional 1 to 2 minutes.
Scallops desired doneness should be between 135ºF to 140ºF internal temperature.
Allow scallops to rest and garnish each with a little carrot schug.
