German Carrot Pineapple Cake

Recipe makes 12 Servings

1 non-stick cooking spray
2 Tbsp flour
16 1/2 Oz German chocolate cake mix
3 eggs, at room temperature
1/3 cup(s) vegetable oil
8 Oz crushed pineapples with juice
1 Tsp pumpkin pie spice
3 medium carrots, peeled and shredded
3/4 cup(s) pecan pieces
1 cup(s) coconut, shredded

Heat oven to 350°F.
Heavily spray a 9 x 13-inch cake pan with non-stick cooking spray and dust with 2 tablespoons flour; shake out excess.
Combine cake mix, eggs, oil, crushed pineapple and pumpkin pie spice in a large mixing bowl.
Add 1/3 cup water and mix for 2 minutes on medium speed with an electric mixer.
Stir in shredded carrots, pecans and coconut with a spoon. Pour batter into prepared pan.
Bake on center oven rack 45 minutes or until a toothpick inserted in the middle comes out clean.
Cool cake completely in pan on a cake rack.
