Recipe makes 15 Servings

28 Oz diced tomatoes
1/2 cup(s) brown sugar
3 medium fresh garlic cloves, thinly sliced lengthwise
1 Tsp cumin
1/4 Tsp cinnamon
1/4 Tsp ground clove
1/2 medium lime, juiced and zest

Place tomatoes, brown sugar, garlic, cumin, cinnamon and clove in a saucepan. Bring to a simmer and cook over low heat for 30 - 40 minutes, stirring frequently.
Crush tomatoes gently with the back of a spoon while simmering. Finish with lime juice, zest and salt to taste.
