Garlic Cashew Sauce

Recipe makes 6 Servings

1 cup(s) raw cashews
2 Tbsp tahini paste
3 garlic cloves, smashed
2 Tbsp fresh lemon juice
1/3 cup(s) Italian parsley, chopped roughly
2 Tbsp fresh chives, chopped
1 cup(s) water, as needed for consistency

Place cashews in a bowl or large Tupperware container and add enough water to completely submerge them by 3 to 4 inches.
Let cashews soak at least 8 hours or 24 hours if time permits for best results.
Drain cashews and add them to a food processor along with the tahini, garlic, lemon juice, parsley, and chives.
Add 1/2 cup of water, a 1/4 cup at a time to reach the consistency of a cream sauce.
Season to taste with salt and pepper as needed.
Serve the dressing cold on salads, toss with pasta, or serve over salmon.
