Garlic and Herb Creamed Kale

Recipe makes 6 Servings

2 Lb kale, leafy greens removed from ribs
3 Tbsp H-E-B Select Ingredients Basting Oil
1/4 cup(s) yellow onion, diced
1/2 cup(s) heavy cream
1/4 cup(s) Parmesan cheese, grated

Place a 3 quart sauce pan over medium heat. Add basting oil and tilt to coat. Add onions and cook for 3 minutes, or until soft. Add heavy cream and bring to a simmer. Let simmer for 5 minutes. Whisk in Parmesan cheese.
Set the sauce aside. Place a large pot over medium heat. Add 1 cup of water to pot and bring to a simmer. Cut kale into bite sized pieces and add to pot. Cover immediately and let steam for 5 minutes, or until slightly wilted.
Drain kale and return to the pot. Pour sauce into the pan and fold together. Serve immediately.
Season with salt and pepper to taste before serving.
