Garden Vegetable Noodle Casserole

Recipe makes 8 Servings

2 Tbsp extra virgin olive oil
4 H-E-B Peeled Garlic, chopped
2 cup(s) roma tomato, chopped
1/2 Tsp basil, crushed
14 1/2 Oz natural chicken broth
16 Oz H-E-B Wide Egg Noodles
32 Oz H-E-B Mediterranean Vegetable Blend
1 cup(s) shredded parmesan cheese

Heat a large skillet over medium heat for 2 minutes.
Add olive oil, chopped garlic, chopped tomato and basil; stir-fry for 4 minutes.
Add chicken broth, bring to a boil, reduce heat to low and cook for 10 minutes.
Meanwhile, cook pasta according to package directions, but after first 4 minutes of cooking, add frozen vegetables.
Bring water back to a boil and cook pasta vegetable mixture 6 more minutes.
Drain pasta vegetable mixture and combine with tomato mixture in a large pasta bowl; toss gently to combine.
Sprinkle with cheese and serve.
