Galacian Style Calamari Salad

Recipe makes 6 Servings

1/4 cup(s) Central Market 100% Spanish Organic Extra Virgin Olive Oil, plus more as needed
1 Lb calamari, thawed if frozen, cut into thin rings, tentacles left whole
6 garlic cloves, sliced thinly
1/4 cup(s) dry white wine
4 stalks of celery, each stalk cut in half then julienned
1 large shallot, minced
1 Tbsp fresh oregano, minced
1/2 cup(s) fresh parsley, roughly chopped
1 large lemon, juiced
1 Tsp smoked paprika, plus more as needed

Place a large non-stick sauté pan over medium high heat.
Add olive oil and allow to get hot enough to shimmer but not smoke.
Add calamari and garlic, and stir-fry for 2 to 4 minutes before adding white wine.
Let it cook until most of the liquid is reduced completely, and calamari is fully cooked.
Remove from heat and place into a container and refrigerate for 25 to 30 minutes until calamari is cold.
In a serving bowl, add cold calamari, celery, shallots, oregano, parsley, lemon juice, olive oil, smoked paprika and toss together.
Season to taste as needed and serve cold or refrigerate for 30 minutes to allow flavors to meld.
