Frito Pie Stuffed Grilled Cheese

Recipe makes 2 Servings

4 Tsp salted butter
6 large slices country white bread, similar slzes
4 slices medium cheddar cheese
1/4 cup(s) H-E-B Chili
1/4 cup(s) H-E-B Corn Chips, toasted

Butter 4 slices of bread and place 1 to 2 slices in non-stick skillet over medium low heat. Do not overcrowd pan.
Place remaining two slices on cutting board and using a knife, core slice of bread and remove crust (but keep crust in one piece). The more bread you remove the more space you'll have to 'stuff' your grilled cheese.
Place 'cored' crust on bread in pan. Layer 1 slice of cheese, a couple spoonfuls of chili and corn chips in grilled cheese. Top with additional slice of cheese and other bread slice.
Press down slightly with spatula and cook until golden brown, then tilt pan and carefully flip grilled cheese. Cook an additional 3 minutes or until golden brown.
Allow to sit a minute before slicing. Serve with additional corn chips.
Chef's Note: This recipe also works great with shredded cheese.
