Recipe makes 6 Servings

1 Tbsp olive oil
2 Lb ground beef
7 Oz diced onion, divided use
33 Oz Cookwell & Company Texas Two Step Chili
15 Oz kidney beans
8 Oz H-E-B Texas Corn Chips
4 Oz H-E-B 3 Cheese Cheddar Blend

Heat a cast iron skillet or a large pot over medium high. Add oil and ground beef. Stir to break up chunks. Cook 3 to 4 minutes to begin browning.
Add 1 cup onions and cook another 6 to 7 minutes to soften onions and brown beef well.
Add chili mix and beans. Stir just until heated through and bubbling. Serve directly from skillet. If using a large pot, pour into serving dish.
Tuck corn chips all around the edge and garnish with cheddar cheese and remaining onions if desired.
