1 1/4 Lb H-E-B Thin Sliced Chicken Breasts
1 cup(s) H-E-B Organics Whole Milk Plain Yogurt
1 cup(s) pickle juice from your favorite pickles
1/4 cup(s) Dijon mustard
3 cup(s) peanut or vegetable oil
3 cup(s) all purpose flour, plus more as needed for dredging
2 cup(s) buttermilk, plus more as needed
6 slices Jalapeño Jack cheese, plus more as needed
6 bakery fresh donuts, cut in half, plus more as needed for sandwiches

Place chicken in a plastic bag along with yogurt, pickle juice and Dijon mustard. Seal and shake bag a bit to evenly distribute everything. Marinate in refrigerator at least 8 hours but overnight is preferred.
Drain and shake off excess marinade from chicken and place on a plate. Allow to sit at room temperature while preparing other ingredients.
In a large heavy bottomed pot or Dutch oven, add oil and heat to 325ºF.
Set up a breading station by placing flour and buttermilk in two separate shallow dishes.
Dredge each chicken breast first in flour then in buttermilk, then once more in flour. Gently shake off excess flour.
Fry chicken in batches (so as not to overcrowd pot) until golden brown and internal temperature reaches 165ºF.
Remove to a sheet-pan lined with a rack to drain.
While chicken is still hot, add a slice of cheese to each and allow to melt.
Place fried chicken in between donut halves and garnish with any of your favorite burger condiments as desired.
