Fresh Strawberry Tiramisu

Recipe makes 12 Servings

6 large egg yolks
1 cup(s) granulated sugar
1 Tsp kosher or sea salt
1 Tbsp lemon zest
2 Tsp vanilla extract
1 cup(s) heavy whipping cream
16 Oz mascarpone cheese
1 cup(s) water
1 cup(s) strawberry jam
14 Oz Alessi Lady Fingers, as needed
16 Oz fresh strawberries, tops trimmed and sliced thin
4 2/5 Oz Lindt Classic Recipe White Chocolate, shaved as needed

In a stand mixer with whisk attachment add egg yolks, sugar, salt, lemon zest, and vanilla extract.
Mix on medium high speed until yolk mixture is very creamy and pale. Scrape down sides as needed.
Scrape out yolk mixture to a large bowl and set aside. In same mixing bowl with whisk attachment add heavy cream and mascarpone cheese.
Mix on low speed until whipped and fluffy. Fold mascarpone mixture into yolk mixture until completely incorporated. Set aside.
In a bowl whisk water and strawberry jam together. Prepare a 9x13 inch casserole dish by spraying it with a little non-stick cooking spray.
To make tiramisu, dunk each lady finger in strawberry water and layer bottom of casserole dish so each lady finger touch. Place cream mixture over lady fingers evenly.
Repeat process with lady fingers and remaining cream.
Garnish top evenly with sliced strawberries and shaved white chocolate. Cover and refrigerate overnight or at least 8 hours to allow lady fingers to soften.
Chef's Note: Serve cold, garnish with powdered sugar and more fruit if desired.
