Recipe makes 8 Servings

2 heirloom tomatoes, diced small
1 large English cucumber, diced small
1/2 cup(s) red onion, minced finely
3 tri-colored bell peppers, diced small
2 cloves of garlic, zested or minced finely
1/3 cup(s) fresh lime juice
1/4 cup(s) extra virgin olive oil
1/3 cup(s) fresh mint, roughly chopped
1/4 cup(s) fresh basil, roughly chopped

Combine everything together in a large bowl, toss to mix everything. Season to taste with salt and pepper as needed.
Cover and refrigerate until ready to use. Let sit at least 30 minutes for flavors to fully meld.
Chef's Note: This is my favorite condiment to serve with grilled meats, I also just eat it as a chopped salad. Add diced serrano for extra flavor and heat.
