Recipe makes 4 Servings

1 non-stick cooking spray
3 Tbsp shortening, soft
6 Tbsp unsalted butter, 3 tablespoons melted
3/4 cup(s) sugar, reserve 1/4 cup
1 egg, large
1 1/2 cup(s) flour
1 1/2 Tsp baking powder
1/2 Tsp salt
1/4 Tsp nutmeg
1/2 cup(s) H-E-B Select Ingredients Reduced Fat 2% Milk
1 Tsp cinnamon

Instructions

Preheat oven to 350°F.

Spray a muffin pan with non-stick cooking spray.

Mix together shortening, butter, sugar and egg.

Sift together flour, baking powder, salt and nutmeg, then mix in alternately with milk and shortening mixture.

Fill muffin cups 2/3 full and bake 20 to 25 minutes until golden-brown.

Remove from oven and immediately dip in 3 tablespoons melted butter, then in mixture of 1/4 cup sugar and cinnamon.
