Ingredients

Recipe makes 12 Servings

20 Oz Italian sausage, uncooked
1 1/2 cup(s) marinara sauce
2 cup(s) mozzarella cheese, shredded
1 H-E-B® Pan Frances, split in half horizontally
10 1/2 Oz Alessi Eggplant Appetizer Sicilian Caponata
1/2 cup(s) Parmesan, shredded

Instructions

Heat oven to 375°F.

Line a large baking sheet with foil.

Remove sausage from casings into a large skillet.

Cook over medium-high heat 6 to 8 minutes or until sausage is no longer pink. Break into small crumbles with edge of spoon during cooking.

Drain sausage on paper towels then return to skillet.

Stir in marinara sauce and 1 cup mozzarella cheese and set aside.

Place bread halves on a large baking sheet, cut-sides up.

Spread caponata evenly over both halves and sprinkle with mozzarella cheese.

Spread sausage mixture evenly over cheese.

Top with Parmesan cheese.

Bake 10 to 15 minutes or until cheese melts and bread browns around edges.

Let stand 5 minutes then cut each half into 6 portions and serve while hot.
