3 large eggs, beaten
1/2 Tsp fine sea salt
2 cup(s) whole milk, divided use
2 1/2 cup(s) unbleached all-purpose flour
1 Tsp fresh lemon zest, finely grated
2 Tbsp olive oil

Instructions

Whisk eggs, salt and half of milk together in a bowl. Add flour, lemon zest and olive oil and whisk until smooth.

Add remaining flour, whisk briefly, just until smooth. Batter should be very smooth and liquid.

Preheat a small non-stick skillet over medium high high. Spray with short bursts of spray oil. Add enough batter to just coat bottom of pan. Swirl quickly to make an even thin layer.

Gently flip over and cook the other side for 1 to 2 minutes. Transfer to plate and repeat with remaining batter.

Chef's Note: These can be served as a dessert or a tapas-style appetizer. They can be filled with almost anything from fruit or chocolate to ham and cheese. In Barcelona they are sometimes filled with pastry crème, deep-fried and rolled in cinnamon sugar.
