Fennel, Apple and Brie Pizza with Cranberry Caramel

1 Central Market Frozen Pizza Crust
1/4 cup(s) maple syrup
1 cup(s) ocean spray cranberry juice cocktail
1 cup(s) balsamic vinegar
1 cup(s) Brie cheese, softened
1/2 cup(s) fennel, thinly sliced
1 cup(s) Fuji apples, thinly sliced
1/2 cup(s) fresh arugula, chopped
1 Tbsp truffle oil

Preheat oven to 400ºF. Set pizza crust out to thaw.
Meanwhile, add maple syrup, cranberry juice and balsamic vinegar to a non-reactive small saucepan over medium/low heat. Bring to a simmer and cook until liquid is reduced by ½ or thick enough to coat the back of a spoon. Set aside to cool.
Spread a generous layer of Brie evenly over the thawed pizza crust.
Spread sliced fennel and apples over Brie (see Chef's note). Bake according to package instructions or until fennel and apples are slightly caramelized.
Drizzle cooled cranberry reduction on baked pizza.
While pizza is still warm, top with chopped arugula and drizzle with truffle oil.
Chef's note: To up the flavor of the pizza, combine fennel and apples with a little olive oil, salt and pepper. Spread out on a parchment lined sheet pan and roast at 400ºF about 25-30 minutes. Cool slightly before adding to pizza.
