1 Tbsp canola oil
16 Oz H-E-B Fajita Vegetable Blend
12 Oz boneless and skinless chicken breasts, thawed, sliced thin
16 Oz H-E-B Steamable Spanish Rice
8 Oz H-E-B Frozen Sliced Zucchini

Spray a 13 x 9-inch microwave safe baking dish with non-stick spray and set aside.
Heat a heavy bottom skillet over high heat for 3 minutes.
Add canola oil and fajita vegetables and stir-fry for 5 minutes or until onions become slightly browned.
Add chicken fajitas and continue to stir-fry for 3 minutes.
Meanwhile, heat Spanish rice according to package directions and spread on bottom of prepared baking dish and set aside.
Place zucchini in microwave safe bowl, cover with plastic wrap and microwave on high power for 4 minutes. Spread cooked zucchini over rice.
Spread fajita vegetables and fajitas over rice and zucchini mixture, cover with plastic wrap and heat in the microwave on high power for 6 minutes.
