Recipe makes 4 Servings

4 large eggs, yolks and whites separated
1 Tsp White balsamic vinegar, or white wine vinegar
2 Tbsp Parmesan cheese, grated
2 Tbsp chives, chopped
1/4 Tsp black pepper
1/4 Tsp kosher salt

Place the egg whites in to the bowl of a stand mixer, mix on high until the whites reach stiff peaks.
Add in chives and parmesan cheese, continue to mix until fully incorporated.
Spoon the egg whites onto the lined baking sheet then create a small nest for the yolk.
Carefully spoon or drop the one egg yolk into each nest of whites. Season with salt and pepper and bake in a 350 oven for 3 to 4 minutes.
Remove from the oven, and serve immediately.
