Recipe makes 2 Servings

2 slices H-E-B Bakery Scratch Rosemary Sourdough Golden Grain Bread
1 Tbsp salted butter, divided between 2 slices
2 large eggs
2 Tsp unfiltered olive oil
2 small slices Havarti cheese

Instructions

Toast bread on light setting and butter lightly. Set aside.

Break eggs gently in small ramekins or espresso cups. Top with olive oil, salt and pepper to taste.

Place cups in an empty saucepan. Add enough water to the pan to reach about halfway up the ramekins or cups. Turn on heat to medium and bring water to a gentle simmer.

While water is heating, preheat broiler or toaster oven. Place cheese on toasted bread and broil until cheese melts and edges brown. Cut toasted bread into strips.

Cook eggs just to a very soft-boil (about 5 to 6 minutes in simmering water) or until egg whites start to change from clear to white around the edges.

Remove egg cups from water bath and serve with bread slices. Stir gently to combine olive oil and soft-boiled egg. To eat dip bread in egg mixture and enjoy.
