Recipe makes 4 Servings

1 large eggplant, peeled sliced crosswise 1/4-inch thick
3/4 cup(s) sour cream
1 1/2 cup(s) panko bread crumbs
12 Oz H-E-B® Healthy Garden Combo Sauce
1 cup(s) mozzarella cheese, shredded
1/2 cup(s) fresh parsley, chopped

Instructions

Preheat oven to 400°F.

Coat eggplant slices by dipping first in egg and then in breadcrumbs.

Place in single layer on greased, foil-lined baking sheets.

Bake 10 minutes, flip slices, and bake an additional 5 minutes.

Spread 1/2 cup of sauce in bottom of greased 8x11 1/2-inch baking dish.

Place half of cooked eggplant slices on top of sauce; there may be some overlap. Pour 1/2 cup of sauce over eggplant slices.

Sprinkle with 1/2 cup of mozzarella. Repeat layers, finishing with cheese.

Bake uncovered until sauce bubbles and cheese melts, about 15 minutes.

Sprinkle with parsley.
