Edamame Dip

Recipe makes 10 Servings

2 cup(s) frozen edamame, shells removed
1 medium avocado, pit removed and flesh scooped out
1 Tbsp garlic, minced
1/2 cup(s) cilantro, chopped
1/4 cup(s) lime, juiced
1 Tsp cumin
1 Tsp kosher salt
1 Tsp onion powder

Bring a large pot of water to a boil on the stove. Add frozen edamame and cook for 5 minutes. Drain water and add cooked edamame to a blender or food processor.
Add all the remaining ingredients to blender and pulse to make smooth. You might have to add little water if you are using a blender to help loosen ingredients and get it started. (Use only a few tablespoons at a time).
Once dip is smooth, season it to taste with salt and pepper if needed and serve immediately or refrigerate for later use.
