1 Tbsp AvoCare Avocado Oil
1 Lb skirt steak, cut into thin slices
1 Cookwell & Company Cheese Enchilada Soup
2 cup(s) Central Market Organics Chicken Broth
4 yellow corn tortillas, cut into small pieces
8 Oz cream cheese, cubed
1 cup(s) frozen sweet corn
1/2 cup(s) cilantro, finely chopped
1/2 cup(s) green onion, finely chopped
1 lime, juiced

Instructions

Heat a large pot over medium-high heat.

Add oil and steak to pan and sauté 4 to 5 minutes until cooked through.

Reduce heat to medium and add all ingredients except lime juice to pot.

Stir and bring to a simmer until cheese melts completely.

Remove from heat and add lime juice.

Serve warm and garnish with fresh avocado slices and tortilla chips if desired.
