Ingredients

Recipe makes 6 Servings

1 Tbsp olive oil
8 Oz ground Italian sausage
48 Oz chicken broth
1/3 cup(s) basil pesto
14 1/2 Oz H-E-B Petite Diced Tomatoes with Garlic and Olive oil
6 Oz pasta
1 Oz spinach, roughly chopped
2 Oz H-E-B Select Ingredients Onion & Garlic Premium Croutons

Instructions

Place a large soup pot over medium heat. Once hot, add oil and sausage. Cook and break apart with a spoon until well browned, about 6 to 7 minutes.

Once browned, add broth, pesto and tomatoes and bring to a simmer.

Add pasta to soup and cook until tender, but not soft.

Remove from heat then gently stir in spinach and serve with croutons.

Chef's Note: Add Parmesan cheese, if desired.
