Easy Pumpkin Pie

Recipe makes 8 Servings

1 frozen pie crust, thawed
1/4 Oz unflavored gelatin
6 Oz light vanilla yogurt
1 1/2 Tsp vanilla extract
3/4 cup(s) zero calorie sweetener
1 1/2 Tsp pumpkin pie spice
15 Oz solid pack pumpkin

Bake pie crust according to package directions and cool.
Pour 1/2 cup cold water into a small microwave safe bowl.
Sprinkle unflavored gelatin into water and stir; microwave on high power for 1 minute.
Add vanilla yogurt, vanilla extract, sweetener and spice to dissolved gelatin; stir to combine.
Stir pumpkin into gelatin mixture and place bowl over another bowl filled with ice cubes.
Stir mixture for 10 minutes or until it begins to thicken.
Pour mixture into the baked crust.
Chill pie for 1 hour and then cover with plastic wrap.
Keep refrigerated until ready to serve.
