4 salmon fillets (4 oz.)
1/2 Tsp kosher salt
1/2 Tsp black pepper
2 lemon, juiced
1 large navel orange, juiced
1 cup(s) white wine

Instructions

Season salmon with salt and pepper, then set aside.

Pour lemon and orange juice into a medium saucepan, then add wine and 1 cup water and bring to boil.

Place a large skillet over medium heat, then add enough hot juice to measure about an inch deep; add salmon fillets, and bring to light simmer; cover and cook 7-10 minutes until desired degree of doneness.
