1 cup(s) H-E-B Jasmine Rice
1/2 cup(s) H-E-B Dried Mediterranean Apricots, julienned
1/2 cup(s) Takara Sierra Cold Sake Ginjo Sake
1/2 cup(s) Vela Farms Ginger Habanero Jelly
1 Tbsp soy sauce
2 egg, whites only
2 Tsp corn starch
1 Lb H-E-B Natural Chicken Breast, Cut into 1 inch strips
3 cup(s) all purpose flour
2 cup(s) vegetable oil

Cook rice according to package directions.
In sauté pan on medium-high heat, add apricots and sake. Cook until all liquid evaporates.
Add jelly and soy sauce to apricots. Heat until smooth, then remove from heat.
In medium mixing bowl, whisk egg whites and corn starch until smooth and frothy.
Toss chicken with egg white mixture, then into flour, coat well.
In large fry pan on medium-high heat, add oil.
Once oil is hot, add chicken a few pieces at a time without crowding pan. Cook to internal temperature of 165°F.
Once all chicken is cooked, about 10 minutes, glaze with apricot jelly sauce. Serve with cooked rice.
Chef's Note: Optional, add garnish of green onions, cilantro, red peppers, or matchstick carrots.
