Dairy Free Corn Chowder

Recipe makes 4 Servings

12 Oz "C" size potatoes, quartered
2 Tbsp olive oil
7 Oz diced celery & onion
2 medium garlic cloves, minced
7 Oz 3 color bell peppers
1 Tbsp jalapeño, minced
12 Oz H-E-B Frozen Corn
1 Tbsp kosher salt
1/4 Tsp black pepper
2 cup(s) H-E-B Original Almond & Coconut Creamer
2 Tbsp green onion, thinly sliced

Place potatoes in a medium pot and cover with water. Place on high heat and bring to a boil and cook until tender, about 4 to 5 minutes. Drain and reserve.
Place a large pot over medium heat and add olive oil, once hot add celery & onion mixture and garlic. Cook 2 to 3 minutes then add in bell peppers and jalapeños. Cook for 1 more minute.
Add in frozen corn and stir to combine, cook 2 to 3 minutes. Season with salt and pepper and add in reserved potatoes and creamer. Stir gently and reduce heat to low. Cook 3 to 4 minutes until heated through.
Garnish with green onions and serve immediately.
