Curried Lentils and Chickpeas Over Atry Smoked Basmati Rice

Recipe makes 5 Servings

1 Tbsp olive oil
1 Tbsp garlic
1/2 cup(s) green lentils
1 cup(s) Atry smoked basmati rice
2 1/2 cup(s) water
1/2 Tsp kosher salt
1/2 Tsp turmeric
1/2 cup(s) diced onion
2 Tsp garam masala
1/4 cup(s) golden raisins
1 can (15 oz) chickpeas

Heat half of olive oil in medium saucepan on medium-high. Once oil is hot, add in half of garlic, lentils, and rice and cook several minutes stirring constantly. Rice should be lightly browned and have nutty aroma. Add in water, salt, and turmeric and cover. Reduce heat and cook 20 minutes.
Meanwhile, in additional medium saucepan add remaining olive oil and place over medium heat.
Add diced onions, garam masala, remaining garlic, raisins and chickpeas. Cook couple of minutes until onions are tender.
Serve curry over the rice.
