12 Oz brussel spouts, shaved
1 Lb H-E-B Boneless Skinless Chicken Thighs, sliced
1/4 cup(s) small onion, sliced
2 Tbsp olive oil, divided
1 Tsp cumin
1/2 Tsp salt
1/2 Tsp black pepper

Preheat oven to 400ºF.
Place Brussels on a foiled lined sheet pan and roast until edges are browned and crisp, about 15 minutes.
Meanwhile, combine chicken with remaining ingredients in a large bowl. Mix well.
Heat a large nonstick skillet on medium-high. Add chicken mixture and cook 12 minutes stirring frequently.
Serve immediately with roasted Brussels.
