Crunchy Spicy Parmesan Crisps

Recipe makes 4 Servings

1 H-E-B Texas Tough Parchment Paper
1/4 cup(s) H-E-B Shredded Parmesan Cheese
1/4 Tsp ground cayenne pepper
1/4 cup(s) tomato, chopped
2 Tbsp cilantro, fine chopped
2 Tbsp red onion, fine chopped

Heat oven to 500°F.
Lightly spray baking sheet with non-stick spray and lay parchment paper on top.
Combine parmesan cheese and cayenne pepper in small bowl.
Spoon cheese mixture by tablespoon on the prepared baking sheet making 8 small mounds. Press each mound with back of fork or spoon until small spaces appear (like a doily).
Place baking pan on center oven rack and bake for 3 to 4 minutes, until cheese is melted and golden.
Remove pan from oven and cool for 5 minutes.
Carefully transfer cheese crisps to wire rack to crisp for 10 minutes.
Combine tomato, cilantro and onion in small bowl.
Before serving, top each with crisp with tablespoon of mixture.
