16 Oz H-E-B Steamable Spanish Rice
1 cup(s) H-E-B Shredded Mexican Blend 4 Cheese
2 H-E-B Large Grade AA Eggs
1 cup(s) Hill Country Fare All Purpose Baking Mix
1/8 Tsp H-E-B Kosher Salt
1/8 Tsp H-E-B Ground Black Pepper
2 cup(s) Hill Country Fare Canola Oil
24 Oz H-E-B Chunky Hot Salsa Picante

Instructions

Prepare the H-E-B Steamable Rice according to package directions and cool.

Combine the cooled rice, shredded cheese, eggs and baking mix in a large mixing bowl. Season the mixture with salt and pepper and set aside.

Heat a skillet and oil over medium high heat for 4 minutes to 375°F.

Form the rice batter into balls, using about 2 Tablespoons for each ball.

Drop into the hot oil and press gently with the back of a spoon to flatten slightly.

Fry the rice bites for 1 minute on each side until golden. Drain the rice bites on paper towels.

Serve the rice bites warm on a platter with a bowl of salsa picante.
