Crunchy Honey Maple Oven Fried Chicken

Recipe makes 8 Servings

3 Lb chicken tenders, approximately 15 tenders
1 1/4 cup(s) H-E-B Honey Maple Glaze, divided use
3 olive oil spray, 3 second sprays
2 cup(s) H-E-B Panko Bread Crumbs
1/2 Tsp salt
1/2 Tsp black pepper, freshly ground
2 Tsp thyme
3 Tbsp olive oil

Place chicken tenders in a gallon size zip top bag with 1 cup honey maple glaze. Close bag securely and gently massage chicken to distribute the glaze evenly. Allow chicken to marinate for 30 minutes.
Heat oven to 400°F. Prepare a baking sheet by spraying it lightly with spray oil.
In a medium sized bowl, mix together panko bread crumbs, salt, pepper and thyme. Drizzle crumbs with olive oil and toss crumbs gently to distribute oil and seasonings. Pour bread crumbs out on a plate.
Remove chicken from bag and press firmly into crumbs. Arrange coated chicken tenders in a single layer on a prepared baking sheet.
Bake for 12-15 minutes, or until golden brown. Serve with an additional drizzle of honey maple glaze if desired.
