Crockpot Polish Bigos "Hunter's Stew"

Recipe makes 8 Servings

6 strips of bacon, diced small
1 medium white onion, diced small
5 cloves of garlic, minced
8 Oz mushrooms, sliced
2 cup(s) H-E-B Bavarian Raw Sauerkraut
16 Oz Better Than Good Smoked Sausage, diced small
28 Oz Muir Glen Organic Fire Roasted Diced Tomatoes
1 Tbsp tomato paste
2 bay leaves
32 Oz chicken stock

In a large Dutch oven set over medium high heat, add bacon and stir-fry 4 to 5 minutes before adding, onions and garlic. Stir-fry for 4 to 5 minutes more until onions are just translucent.
Add mushrooms, sauerkraut, and sausage, continue to cook for 5 more minutes before adding tomatoes, tomato paste and bay leaves. Add chicken stock and bring everything to a gentle simmer for 30 minutes, covered. Remove bay leaves before serving.
Serve with crusty bread if desired and season to taste as needed with salt and pepper.
Chef's Note: For a more authentic bigos soup add 1/4 tsp all spice, and follow same directions.
