2 Tbsp canola oil
1 1/2 Lb Bear Creek Smoked Pork Jowl, sliced into 1/4-inch pieces
2 Tsp kosher salt, plus more as needed
2 Tsp cracked black pepper, plus more as needed
1 Tsp sugar

Set a cast iron pan over medium high heat. Add oil and allow to get hot.

Season each jowl with salt, pepper and sugar. Sear for 3 to 4 minutes per side or until nicely crispy.
