Crispy Salmon with Quick Sweet & Savory Potatoes

Ingredients

Recipe makes 4 Servings

3 large sweet potatoes, peeled and cut to a medium dice
1 Tsp Sabatino Tartufi Truffle & Parsley Sea Salt, plus more as needed to taste
1 Tsp cracked black pepper, plus more as needed
1/4 cup(s) extra virgin olive oil, plus 2 tablespoons of oil for salmon
20 Oz salmon portions, 4 portions
1/2 cup(s) Pecorino cheese, grated

Instructions

Preheat broiler to high and position rack to sit approximately 6 to 8 inches below broiler. Place a dry sheet pan in oven to get hot.

In a bowl, combine sweet potatoes with truffle parsley salt, pepper and olive oil; toss well to coat.

Place potatoes on preheated sheet pan and broil 5 minutes. Stir potatoes then place back under broiler for an additional 5 minutes or until potatoes are browned.

While potatoes are cooking, place a medium sized non-stick skillet over medium-high heat.

Heat 2 tablespoons of olive oil. Season salmon liberally with salt and pepper then place skin side up/flesh side down in pan.

Cook 5 to 6 minutes before flipping to allow salmon to develop a nice crust. Continue to cook until fish reaches an internal temperature of at least 155°F; set aside to rest.

Serve salmon with sweet potatoes garnished with Pecorino cheese. Season to taste as needed.
