Crispy Salmon with Brussels Sprouts and Tomato Hash

2 Tbsp olive oil, divided use
1/2 cup(s) onion, diced
1 cup(s) cherry tomatoes, halved
2 cup(s) sweet potatoes, diced
10 Oz shaved Brussels sprouts
1/4 Tsp garlic powder
1 Tbsp Dijon mustard
1 Tsp honey
1 cup(s) H-E-B Roasted Garlic Panko Bread Crumbs
1 Lb salmon fillet, cut into 4 equal portions

Instructions

Preheat oven to 400ºF and line a sheet pan with foil and set aside.

Heat oil in a large skillet over medium heat. Add in onions, tomatoes, potatoes and Brussels sprouts. Season with garlic powder, cover and cook 20 minutes, stirring frequently.

Combine Dijon mustard and honey together in a small bowl, then brush it over salmon.

In a separate bowl mix remaining olive oil and bread crumbs together, then sprinkle generously over salmon.

Place salmon on sheet pan, then in oven 20 minutes or until desired doneness is reached.

To serve, divide hash among 4 plates, then top with salmon. Serve immediately.
