Recipe makes 4 Servings

1 Lb salmon cut into 4 portions
1 Tsp kosher salt, plus more as needed
1 Tsp cracked black pepper, plus more as needed
1/4 cup(s) rendered bacon fat, save cooked bacon for another use
2 Tbsp Gourmet Garden Lightly Dried Chives, plus more as needed

Instructions

Season salmon liberally with salt and pepper.

Place bacon fat in a large non-stick sauté pan set over medium-high heat.

Place salmon flesh side down, skin side up and sear 8 to 10 minutes or until nicely browned and crispy.

Flip salmon over and finish cooking or until internal temperature reaches at least 145ºF.

Allow salmon to rest and garnish with chives, season to taste with salt and pepper as needed.
