Crispy Pork Milanesa with Plum Mustard

Recipe makes 6 Servings

2 cup(s) H-E-B Lemon Pepper Panko Bread Crumbs
12 Oz thin sliced pork milanesa
2 Tbsp extra virgin olive oil, plus more as needed for frying
1/3 cup(s) Dijon mustard
1/3 cup(s) Hill Country Fare Red Plum Jam
1 Tsp navel orange, zest only

Place panko bread crumbs in a shallow dish. Place a non stick skillet over medium heat.
Place a slice of pork into bread crumbs individually and press to coat completely with bread crumbs. Repeat for each slice of pork until all are coated.
Add olive oil and sear pork for 1 to 2 minutes per side or until the panko is golden brown on both sides. Repeat with each slice, remove to a plate to rest.
While pork cools, in a small bowl combine mustard, plum jam, and orange zest. Whisk to combine.
Serve plum mustard sauce on top of each slice and season with salt and pepper as needed.
